SPICY VEGETABLE RICE




     Preparation:20 min, Cooking time:30 min,  yield:serves 2-3

METHOD:

1.Clean and wash the rice, drain the water and keep it aside.
2.Grind grated coconut, soaked poppyseeds together into fine paste.Chop all the vegetables, green chillies and keep it aside.
3.Heat the pan, add mustard seeds when it splutters add cumin seeds, cloves, cardamom, bay leaves and fry for few seconds.
 4.Then add chopped onion and green chillies,sauté it for a min till onions  becomes transculant,then add capsicum and fry for 30 seconds.
 
5.Add mixed vegetables and fry for 2 min, then add dry powders, turmeric,  redchili powder,garam masala, coriander powder,cumin powder, amchoor 
powder and mix well.
6.Add rice with 2 1/2 cups of water, mix well and cook for 15-20 min or till done.Or pressure cook for about 1 whistle.
7.Once it is cooked Mix spicy vegetable rice gently and garnish with cilantro.
                         serve hot spicy vegetable rice with raita.
