Aloo Methi Soya curry is a very simple dish. It's healthy & good in protein. It can be used with chapati, poori,and pulka etc. Here i used soya powder instead of soya chunks. Boiled soya chunks could be used if you like it.

- Fenugreek leaves - 1/2 bunch
- Boiled Potato - 2 Medium size
- Tomato - 1 big size
- Onion -1 small size
- Soya powder - 1 tbsp
- Chili powder - 1/2 tsp
- Turmeric - 1/2 pinch
- Mustard seeds - 1/2 Tsp
- Garam masala - 1 Tsp
- Green chilies- 2
- Cilantro - 1/2 cup chopped
- Oil - 2 Tsp
- Salt - To taste
Method:-
- Heat the oil in pan , and add mustard seeds to splutter. Then add chopped onions & green chilies fry till translucent and add chopped tomatoes and cook for about 1-2 min until it's soft.
- Add chopped and fresh fenugreek leaves and cook till it's soft and nice. Then add boiled potatoes and mix it nicely.
- Add in turmeric powder, chili powder, garam masala, and soya powder and mix it nicely , and add some water according to your consistency about how much thick or thin curry you want
- Add some salt to taste and stir continuously and cook for about 3-5 min or till it gets thicken.
- Finally, garnish the dish with chopped cilantro and serve hot Healthy and Delicious Aloo Methi Soya Curry with any types of Roti and enjoy.
