DUMROT/KAASHI HALWA/WHITE PUMPKIN HALWA




Preparation time: 25 min, Cooking time: 30 min, Serves: 2-3

INGREDIENTS:

METHOD:

1.   Peel the outer skin and seeds and grate the pumpkin and keep it aside.

2.  Squeeze out the water tightly from grated pumpkin with the help of your hand.


3.    In a wide pan heat the ghee/clarified butter.
4.    Add squeezed pumpkin and sauté it for few minutes till raw smell goes away.

5.  Then add sugar and mix till it dissolves, add Maida paste to absorbs the sugar syrup quickly and thick.


6.  Then add crumbled kova and sauté it till it blends nicely with the mixture.Or till you get nice aroma.

7.  When the mixture becomes thick and halwa start leaving the sides of the pan, switch off the heat and keep it aside to cool down.

8.  Garnish with nuts and serve yummy kashi halwa and enjoy.

Pumpkin and lilva beans curry is a great combination blended with spices and dry coconut. It tastes great with  chapati  or rice. Palak soppina akki rotti/Palak/spinach rice flour rotti
